Preparation
STEP 1
Preheat the oven to 450°F.
STEP 2
IN a large bowl rub down the lamb with olive oil, salt, coriander, cumin, garlic powder, onion powder, paprika and pepper until all sides of the leg of lamb are covered.
STEP 3
PLACE the leg of lamb in an ALCAN® Heavy Duty 30 lb Roaster, place it on a baking sheet and bake in the oven for 30 minutes.
STEP 4
REDUCE heat to 350°F and finish cooking the lamb for 30 minutes or until it has an internal temperature of 145°F. Remove the lamb from the oven and let the meat rest for 10-15 minutes.
STEP 5
Slice the leg of lamb before serving.
